Is this really the Deep South??

Now I'm beginning to wonder where I really am. I didn't fix soup tonight but tomorrow night will definitely be something very warm and spicy. The cornbread casserole was good but not exceptional, I'm going to try it with my own cornbread instead of a mix. I'm thinking a good tweeking will make it exceptional. I'm looking forward to this cold blast being in the future. In the meantime I believe we'll eat stew this weekend.

Corn Bread Casserole

Ok, I've been in the South for six years now so hopefully that puts a big dent in my "Yankee" status. One of the highlights of Southern cooking is cornbread. I could eat this stuff for every meal. Tonight I'm fixing it in a casserole. I cheated, I'm using a Stove top stuffing mix but that's what the recipe calls for. Its full of corn, ham, onions, celery pepperjack and of course the cornbread. If it's as good as it smells I'm fixing it for my women's group next week...I'll let you know.
