Do you ever get really hungry for something, see it in the store and have to fix it? That was my experience today. I knew we would be having salmon for dinner and I like to pick that up fresh so I dropped by the grocery on my way home from church and low and behold there were the most gorgeous beets I'd seen since the farmer's market in the fall. They were all the right size and I knew they were destine for our dinner table. I decided to roast them on the grill as well as roasting the salmon. The salmon I prepared with a topping made of mayo (made with olive oil) and lime juice probably a tablespoon of each. I brushed the mixture on all the salmon fillet pieces then sprinkled a nice coating of Mrs' Dash Lemon Pepper, man even after I've eaten it makes my mouth water thinking about how good it was. The beets I cleaned well (organic are dirty) and cut the greens off to an inch of the beet, I would have cooked the greens but alas my family would have stoically turned there collective noses up. They make good compost. I sprayed the foil and the beets with cooking spray then wrapped them up and put them to grill for an hour on a covered grill. Peel them and toss with a little butter and it's like eating candy. Lundberg makes a fragrant brown basmati rice that was a great accompaniment along with a salad and that was dinner...mmmm good.
